Thoughts from work and a recipe

     I'm sitting at work, its 3:34 am, listening to 3 crazy old lady's yelling. It's practically like a nursing home here and all of the 3 women are confused. One is crying because she doesn't understand why she can't go home, one has to use the bedpan I swear every 30 min and nothing ever comes out, and one falls asleep then wakes up not knowing where she is and starts pulling off all of her wires. It's a nonstop mad house.

     Anyways, I got some great news today. My family is getting a beach house in Wrightsville Beach, NC for a family reunion. We kept going back and forth if we even wanted to go and my mom finally said let's just book a house and go. My family usually get's a beach house at Folly Beach which is 20min from my house. We all got bored with it and alot of the family would still work a few days a week since we were so close to home. I'm taking the whole week off and can't wait to relax and get some sun. If anyone's ever been to Wrightsville Beach or Wilmington and know of some fun stuff to do, restaurants to try, or good shopping let me know!

     Does anyone watch Real Housewives of Orange County? I just caught up on last weeks episode and I was getting so annoyed with Lydia talking about her mom smoking pot I was seriously about to turn it off. That's all they keep talking about is how her mom smoked pot her whole life growing up and how she wants her to quit but then Lydia's husband said that her mom was a wonderful grandmother to the kids and if she wants to smoke weed let her. In Lydia's first episode she said that she came from money and then another episode she talked about what a great mom she had and now she's stressing about her mom smoking pot? Obviously you turned out just fine so get over it. Sorry it just really annoyed me. But how cute was Terry's card to Heather at the end of the episode? They had been fighting a lot and even used the "D" word (their term not mine) at one time so the card he gave just explained how much he really loved her and how happy he was in their marriage. Speaking of Bravo, I  heard they're filming a Bravo show here in Charleston! Thomas Ravenel is the star, which is odd to me because on Bravo the main star, is that even what you call them? Bravolebrity? anyways, usually it's a female lead. I'm interested to see how they portray Charleston. Obviously it will be a very different Charleston than what I'm used to. Honestly, I'd be surprised if it lasted. But I'm not going to lie, I'm sure I'll end up watching it.


     I'll leave you with a yummy, easy recipe I made last week. It's from The Skinnygirl Dish by Bethenny Frankel. I'm not sure how healthier it really is because it still has tons of cheese in it, but it's delicious and super easy.
Healthier Baked Ziti
Serves 4
16 ounces whole wheat ziti (I just used regular kind, I couldn't find wheat)
15 ounces part-skim ricotta cheese
1/2 cup freshly grated Parmesan Cheese
1 tsp garlic salt
3/4 tsp freshly ground black pepper
1 egg white, lightly beaten
2 cups tomato sauce
8 ounces shredded part-skim mozzarella cheese
2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh basil
  1. Preheat the oven to 350 degrees. Cook the ziti according to the package directions until slightly firm, or about 8 minutes. You don't want to overcook the pasta because it will cook more in the oven. While the pasta is cooking, spray a casserole with cooking spray.
  2. Drain the ziti and return it to the pot. Let it cool. In a separate bowl, mix the ricotta, Parmesan, garlic salt, black pepper, egg white, parsley, and basil. When the ziti is room temperature, stir the ricotta mixture into the ziti until everything is combined. Stir in the tomato sauce and mozzarella.
  3. Pour the mixture into the casserole. Bake uncovered for 20 minutes. Serve warm.
  4. Enjoy!

  1. We went to Wrightsville Beach for my bachelorette party! Tower 7 is really good Baja style Mexican food. BlueWater Grill is also good..that restaurant reminds me of one that would be on Shem Creek. Oh, and you must get a hot dog from the Trolly Stop! Have fun!
