:: One ::
We had a very low key 4th. We basically sat around the first half of the day then went on the boat in the late afternoon to watch the fireworks in the harbor. I hadn't been on a boat at night in so long so I had forgotten how calming it is.


 It's impossible to get a good picture of fireworks. They all ended up just looking like fire in the sky.


:: TWO ::
I was a little productive yesterday. I decided to tackle "the cyclone" that is also known as my closet. I literally live out of my closet. I don't have my own dresser so all my underwear, bras, basic t shirts etc are stuck somewhere in my closet. I know what you're thinking, why don't I have a dresser? Because when we moved in our house Theo had a dresser for his clothes but not a matching one for me and we didn't ever feel like taking the time to buy one. So until then I'll continue to live out of my closet.

:: THREE ::
We had taco night a few nights ago and I decided to try out a taco recipe I found on Pinterest. Or as my neighbor calls it "Pinerist."

Recipe

 "Dump 1 envelope of taco seasoning, 6 boneless, skinless chicken breasts & a jar of salsa in the crockpot, stir and cook on high(4-6 hrs.) or low(6-8 hrs.) Should be able to shred with a fork. Place meat mixture in tortillas and top with your favorite toppings!"


Since it was just Theo and I, I used 3 chicken breasts but still used a whole packet of taco seasoning and about 3/4 jar of salsa. On high, the chicken was ready in 4 hours but we ended up letting it cook for about 5.5 hrs and it was very easy to shred with a fork. Put it in taco shells with some cheese, sour cream, and lettuce was they were ready to be eaten. This way basically cut out the cooking time and I think we both prefer tacos this way now too. 



:: FOUR ::
To keep with the theme I also tried out a Peach Margarita recipe I found. 

recipe from A Beautiful Mess
Peach Margarita, makes one.
1/2 cup peach puree
1 lime
1.5 ounces tequila (1800 Silver)
1/5 ounces triple sec
1 tablespoon simple syrup (or more to taste)
sea salt and a peach slice to garnish
First skin and puree two (white) peaches. This should yield enough peach puree. Combine the puree, lime juice, tequila, triple sec and simple syrup. Stir to combine. Rim your glass by placing the rim in a shallow amount of water and then dipping it into coarse sea salt. Add ice and pour the mixed drink over ice. Garnish with a peach slice.


I clearly don't know how to pick peaches because mine were hard and had no taste. Aside from that the margarita was tasty and I felt like I was drinking something somewhat healthy since I made the puree myself. I think I'm going to start making all margaritas this way from now on.


:: FIVE ::
How cute is this Madewell dress? I love how basic it is and would be so easy to just throw on and go. It was great reviews too and you can wash it in the WASHING MACHINE!! Thank you Madewell for making one thing machine washable! I just don't know what color I like the best. I'm leaning towards red, I don't own much red but the lighter blue is pretty eye catching too.

  1. I make tacos just like that but stick 'em in the crockpot all day. And the margarita looks yummy! Love a good Mexican night.
