Chicken Florentine

I made this yummy easy dish last week from my new Giada's Family Dinners cookbook. We always keep frozen chicken breasts from Costco in the freezer so the only things I really had to buy were frozen spinach, shallots, and cream. Easy enough. If you're looking for an easy healthy meal this is it.

{Chicken Florentine}
4 servings
 
Ingredients
 
4 boneless skinless chicken breasts
S&P
All purpose flour
6 tablespoons butter
2 tablespoons of sliced shallots
1 tablespoon garlic
1 1/2 cups dry white wine
1 cup heavy cream
1 tablespoon chopped parsley
2 10 oz packages frozen cut leaf spinach, thawed and drained 
 
 
Recipe
 
Sprinkle salt and pepper on the chicken. Coat the chicken lightly in flour. Shake off excess flour. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the chicken and brown, about 5 minutes per side. Transfer chicken to a plate and cover with tinfoil. 
Melt 2 tablespoons of butter in same skillet over medium heat. Add shallots and garlic and sauté until shallots are translucent, about 1 minute. Add the white wine. Increase heat to medium-high and boil until the liquid is reduced by half, about 3 minutes. Add the heavy cream and boil until the sauce is reduced by half, about 3 minutes. Season with S&P. Add the chicken to the pan and coat in sauce. 
Melt 2 tablespoons of butter in another large skillet over medium heat. Add the spinach and sauté until heated through. Season the spinach with S&P. Arrange the spinach on each plate. Place the chicken on top of the spinach. Pour the sauce over the chicken and serve. 
 
 
We served ours with Target's boxed couscous by their brand Archer Farms. They're so easy to make too. Just boil hot water and stir in the couscous and you're done.
