I just went to a small technical college for nursing school so I don't have my own "team" that I'm die hard fan for. But that really doesn't matter because my husband is a big enough of a fan of the USC gamecocks for the both of us!

Theo actually went to the University of Georgia his first two years of college then transferred to the University of South Carolina. He always says he should of never gone to UGA because he's always been such a big USC fan all of his life, plus the out of state tuition was a killer!
This Thursday is the Gamecocks first game of the season against the North Carolina Tar Heels.
Theo's heading to Columbia early Thursday to start drinking tailgating and I'll be back in Charleston watching the game with a friend at bar. I have no clue who's predicted to win but I do know if USC doesn't win I'm going to have one angry husband!
I may not be big into watching football but I do love tailgating and eating all the yummy food everyone makes! This Buffalo Chicken Dip is amazing and so easy. It's always a crowd pleaser and whenever we have people over to watch the games we always make it. Plus it's a "chicken" dip and the Gamecocks are "chickens/roosters?"..yah?...no.
{Buffalo Chicken Dip}
Ingredients
8oz package cream cheese
1/2 cup blue cheese or ranch salad dressing
1/2 cup Frank's Hot Wings Sauce, or your choice of pepper sauce
1/2 cup crumbled blue cheese You could do mozzarella cheese if you aren't a big blue cheese fan
2 cans (12.5 oz each) white chicken breast in water, drained You could choose to cook and chop 1 or 2 chicken breasts or even use a rotisserie chicken.
Recipe
Heat oven to 350 degrees.
Spread cream cheese on bottom of a 9x13 casserole dish, or pie pan, or whatever you have lying around.
Mix the salad dressing, wing sauce, crumbled blue cheese, and chicken in a bowl.
Pour this mixture on top of the cream cheese.
Bake for 20 minutes until hot and bubbly.
Serve with tortilla chips, crackers, or go the healthy route and have celery.

ReplyDeleteI live and die for football season. Were having our draft party on Saturday and I'm super pumped! One of the best parts about football season is the tailgating...and the food! My brother makes that exact same dip, everyone loves it!

I love that you put substitutions in for blue cheese. I'm a fan of buffalo chicken dip, but I hate blue cheese so anytime I'm around it I always have to ask what's in it. So good.
