I realize this chicken dish is nothing new, it was made by Hellman's so it's probably on the container of mayonnaise, but we recently tried it for the first time and it's beyond good. It's such an easy, delicious dinner. All the ingredients you need are already in your kitchen!

Adapted from The Enchanted Cook


1/2 cup Mayonnaise
1/4 cup shredded Parmesan cheese
4 boneless, skinless chicken breasts I used 2 breasts since it's just the 2 of us
4 teaspoons Italian bread crumbs I used Panko bread crumbs

Preheat oven to 425 degrees.
Please mayo and cheese in a small bowl and stir to mix.
Place tin foil in a baking dish, I used a 9x9 pan. 
Lay chicken breasts in the baking dish and cover with the mayo and cheese mixture.
Sprinkle with bread crumbs.

Place in oven and bake for 20 minutes or so, until chicken is cooked thoroughly and the top is browned. 

I served ours with The Skinnygirl Dish's Easy Dinner Salad with Simple Dressing.
This salad is so yummy and has a really great taste. The cranberries mixed with the blue cheese give it a good sweet/salty combination. The dressing is basically oil and vinegar with added Dijon mustard that give it some tang. This is a great healthy salad to start off the New Year's Healthy Eating Goals!

Easy Dinner Salad

10 cups of spinach
2 tablespoons finely chopped walnuts
4 tablespoons crumbled blue cheese
 I also add about 1/2 cup dried cranberries. 

In a bowl, toss the spinach, walnuts, cranberries and blue cheese together. Drizzle with the Simple dressing.

Simple Dressing

1.5 tablespoons balsamic vinegar
1 tablespoon EVOO
1 teaspoon Dijon mustard

In a bowl, whisk all of the ingredients together and drizzle over salad.
