Dinner and a Movie

DINNER
Theo's been eating a lot healthier this week to make up for all the crap we ate this past weekend. I'm trying to follow suit and decided to make this Rainbow Salad with Honey Peanut Dressing for dinner last night.  We had everything on hand so it made it even easier. The original recipe is made with almond butter but we only had peanut butter so I used that instead. After making the dressing I was worried the peanut butter would over power the salad but it didn't at all. It all blended in well together. Definitely will be making this salad again. I like to call it figure friendly and husband approved.

{Rainbow Salad with Honey Peanut Dressing}

2-4 servings

Ingredients

Salad
8 oz boneless skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon chili powder
2 cups of grape tomatoes, cut into halves
1 cup blueberries, I used frozen and allowed them to thaw before use
3 cups of spring mix lettuce, chopped
1/2 cup feta cheese
1/2 cup almonds, chopped
1 cup chopped cucumber 
1 avocado, sliced 

Dressing
3 tablespoons of peanut butter
1 tablespoon of olive oil
2 tablespoons of orange juice
3 tablespoons of water
1 tablespoon of stoneground mustard
1/2 tablespoon of honey
1/4 teaspoon salt
1/2 teaspoon garlic powder


Recipe

Preheat oven to 375 degrees. 
Sprinkle the chicken with salt, pepper and chili powder on each side. Place chicken in a baking dish and bake for 25 minutes.
Cut and prep all vegetables and fruits. 
Once chicken is done baking, either cut into bite sized pieces if you prefer warm chicken on your salad or wait for the chicken to cool and then cut it.
Place the salad ingredients in a large bowl, saving the avocado till the end.
For the dressing, puree all the dressing ingredients in a food processor till smooth. I used my hand blender. Taste and adjust to your preference. We ended up adding in a tad more OJ thinking it was a bit too much peanut butter flavor.
Add the cut up chicken to the salad, pour on the dressing and toss until well mixed.
Add the avocado after mixing the salad or you'll end up with mushy avocado.

And viola! A beautiful, healthy, delicious salad!



MOVIE

I realize this movie isn't new but if you haven't ever seen 500 Days of Summer before you need to. It's such a cute, funny movie and Zooey Deschanel and JGL have such great chemistry. The music in the movie is awesome too. I never buy movies on DVD and this was one I bought as soon as it came out. We've been watching New Girl lately so I've been on a bit of Zooey kick.

  4. I've really been getting my brain back into healthy eating mode. I was bad this winter, and I know bikini weather is nearly upon us so I've been trying to get back into shape! This salad sounds delicious, I will give it a try. And I absolutely love 500 Days Of Summer...such a good movie.

  7. I have a recipe that uses peanut butter in the sauce and it is so good. Hmmmm that reminds me I haven't made it in a while. Anything that is man approved is a winner in my house lol ;-)

  8. Yummy salad. Bet soy not butter would be disgusting as a PB/almond replacement so I'll have to work on the dressing (poor Trey and his allergies). Love some Zoey but we still haven't seen that movie!
