Dinner and a Movie

This is a healthier take on a baked ziti. It's penne coated in tomato sauce and cheese and topped with more cheese and zucchini covered in breadcrumbs. Ok so maybe it's not that healthy but the zucchini helps. The recipe only called for 10-20 slices of zucchini but as you can see it just wasn't enough. Next time I'm doubling the amount of zucchini so it covers the whole pan. Either way it was tasty and even better as left overs the next day.

Baked Zucchini Parmesan

10-20 slices zucchini (enough to cover the top of a 9x13 pan) -Clearly I can't follow directions!
¾ cup seasoned whole wheat breadcrumb
5 egg whites
1 lb. penne pasta
3 cups tomato sauce 
¾ cup shredded Asiago cheese
parsley for topping


Cut the zucchini into ½ inch thick slices. Put the egg whites and breadcrumbs in separate bowls. 
Preheat the oven to 400 degrees.
Dip the zucchini pieces into the egg white and the cover with the breadcrumbs. Place on a baking sheet and bake for 25-30 minutes, carefully flipping once towards the end. Remove from the oven when browned and firm.
While the zucchini are baking, cook the pasta according to package directions. Drain and mix together with 2 cups sauce and ½ cup cheese. Pour into a greased 9x13 baking dish. 
Arrange the baked zucchini pieces over the top, cover with remaining 1 cup sauce and ¼ cup cheese. Bake for 10 minutes or until cheese is melting and everything is hot and bubbling. Sprinkle with parsley.


We watched this movie on Netflix this past weekend. It's very strange, a couple is having a destination wedding in Arizona and after the wedding the best man is found dead lying on a cactus. So the couple has to cancel their honeymoon to arrange a funeral for the best man. The movie is basically them finding out more about the best man than they knew. He was living another life that no one knew about. The movie was very dry but had it's funny moments. Before we watched it I looked up reviews on IMDB for the movie and it was crazy how many people loved this movie. It was good but like I said it's very different. Worth checking out if you have Netflix.
