Dinner and a Movie

DINNER
Sorry for the lack of blog posts this week. It's been a very busy week but more on that tomorrow. I've got a delicious super duper easy recipe to share. If you like Sweet and Sour chicken from the cheap Chinese place in the mall then is dish is for you. I think it's even better than the cheap Chinese place in the mall. And you know it's actual chicken, I mean who knows what they're serving you, right?! I served ours over instant white rice, I don't have patience to cook actual rice, and a mix of frozen vegetables that I sauteed with butter and s&p over the stove.

Sweet and Sour Chicken Chicken Served Over Vegetables and Rice

Ingredients

1 1/2 to 2 pounds of frozen popcorn chicken
6 tablespoons of honey
4 tablespoons of ketchup
4 tablespoons of sugar
2 tablespoons of white distilled vinegar
2 tablespoons of soy sauce
salt and pepper to taste
chopped green onions and sesame seeds for garnish (I didn't use either)


Recipe

Cook popcorn chicken according to package.
In a saucepan over medium heat, whisk together honey, ketchup, sugar, vinegar, soy sauce, and salt and pepper.
Bring sauce to a boil while stirring and simmer for a few minutes allowing sauce to thicken. 
Toss cooked chicken in sauce and serve over rice and mixed vegetables (broccoli, carrots, cauliflower). Garnish with green onions and sesame seeds.

MOVIE

I had been dying to watch this movie since I saw the trailer months ago. We finally watched it and it didn't disappoint. Walter Mitty is a day-dreamer who finally has his chance to discover some of the most beautiful places in the world. The cinematography is breathtaking at times and the overall movie is just entertaining. I really liked it and liked that Kristen Wigg played a serious role rather than her normal comedies.

  6. I love anything Chinese so I will be trying this one out! Have you ever gotten the S&S chicken (or orange chicken) from Trader Joe's? SO good and a really easy dinner for a busy night!

  13. I like that you used popcorn chicken - it would be so much better than the plain old chicken breasts I usually use. Walter Mitty had so-so reviews on Vudu so I'll have to twist Trey's arm on this one but am intrigued!

  14. That chicken looks amazing! I love the trader joe's sweet and sour chicken so I'm sure I'd love this recipe as well. I wanted to see that movie in theaters too but never got around to it. Good to know that it's out on DVD now!
