DINNER
Theo and I and are always trying to eat healthy and eat on a budget which isn't easy. I found this Honey-Glazed Chicken recipe in my Betty Crocker 4 Ingredient Dinners Cookbook and had all the ingredients on hand which is always a major plus in my book. By the way, this cookbook is really awesome because literally everything calls for 4 ingredients or less. We've been loving spaghetti squash lately so We figured why not put the chicken on top of cooked spaghetti squash?! It worked out great and tasted delicious. This chicken would be great on top of a salad or just a change up from normal baked chicken. This is an extremely low calorie meal that fills you up.
Honey-Glazed Chicken
serves 6
Ingredients
6 skinless chicken breasts
1/2 cup orange juice
1/2 cup honey
2 tablespoons of lemon juice
salt and pepper for taste
Recipe
Heat oven to 375 degrees. Grease a rectangular pan and place the chicken in the pan. Mix remaining ingredients with 1/4 teaspoon of salt, pour over chicken.
Cover and bake for 20 minutes, turn chicken. Bake uncovered for 20-30 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut.
We served ours on top of spaghetti squash and poured the remaining sauce over the chicken and squash. If you don't know how to cook spaghetti squash you can click here for a great tutorial.

MOVIE
I really liked this movie, Theo said it was just ok. I think I liked it a lot because it got me in the mood for summer and reminded me of being young and finding yourself. It's a pretty funny movie and just overall entertaining. Steve Carell is in it but is so different from his normal funny self and that's worth watching right there. We watched it on HBO but I'm sure it's available at Redbox.

A four ingredient cookbook - I need that!!
ReplyDeleteThis looks great! We've used zucchini as a pasta substitute, but haven't tried spaghetti squash. I thought that movie was just so-so too.
ReplyDeleteI've tried a few recipes with honey lately and its my new favorite! (Including your honey lime enchiladas, I finally made them and loved them.. though yours were better!) I wish I could get Steve to eat spaghetti squash, it's too much effort for just me to eat. haha!

ReplyDeleteLove anything honey related! I have a Gooseberry Patch cookbook that is my favorite because it's all 5 ingredients or less dinners. And it's all normal stuff that I always have in my house! When recipes get too fancy/too many ingredients, I'd rather just go out to eat haha
