Dinner and a Movie

DINNER
I'm not a big salad eater but I love Greek salads. I think it's the combination of the all the tart flavors that make it so good. I love a simple red wine vinegar and olive oil dressing on it. The other night I knew I wanted a Publix rotisserie chicken but wasn't sure what to serve it with. Publix has the  best rotisserie chickens. Their Mojo flavor is out of this world. It's delicious all on it's own. I decided to make a Greek salad and top it with the chicken. Greek salads are great because you can top them pretty much with anything and as long as you have feta cheese you've got a good salad.


Chopped Greek Salad with Rotisserie Chicken

Ingredients

Salad

These are just what I had at my house, you can add more or less of any of these or add your own ingredients

2-3 cups of chopped mixed greens
1/2 half cucumber, chopped
1 cup of cherry tomatoes, halved
1 cup of feta cheese (or more if you like :))
1/2 cup chopped kalamata olives
1/4-1/2 cup banana peppers, chopped
3-4 pepperoncini peppers, depending on your heat preference
1 rotisserie chicken, carved into small pieces


Dressing

1/2 cup olive oil
1/4 cup red wine vinegar
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
s&p for taste



Recipe

Mix the dressing ingredients and set aside.
Add all of the salad ingredients together and mix well. Top with the chicken. 
Drizzle on the dressing to your liking.

Enjoy!





MOVIE

WARNING: Do NOT watch this with your mother in law. There are a lot more sex scenes than expected and it makes it awkward for everyone.

So aside from that awkwardness, this movie was just plain weird. Go figure Theo and his mom loved it and I was bored out of my mind. I'm sure you know the premise, the main character Theodore starts a relationship, if that's even what it truly is, with an operating system. Unlike Siri, this OS has a mind and learns from experiences. It's basically like he's talking to a human. They fall in love and then it gets weird. The movie had great reviews and was nominated for a few awards so don't trust my judgement, see it for yourself.

  12. Whaaat, how have I not heard of this movie?! It sounds so strange. And there is literally nothing worse than watching sex scenes with parents, I've been there while watching with my dad before and it's so awkward!

  13. I looove Greek salad! I'll be making one for myself in the near future now, this post totally has me craving one! I've been wanting to see that movie, it does sound weird but I often like the really weird movies!

  14. This is such a good idea! I'm not a big salad person either and I never feel like cooking chicken just to add it to a salad, but using a rotisserie chicken is such a good idea! I am definitely going to start doing this for lunches more often! Even though Her won so many awards and nominations, it just didn't seem like something I would enjoy-- I'm sure I'll see it eventually, I do love Olivia Wilde and Charlize.

  15. Yesss I'll only buy Publix's rotisserie chicken because it's so, so good for anything. Greek salads are the best. Glad we can agree on "Her" because it was beyond awkward (mother-in-laws would not help that though ahah).

  19. mmhmmm recipe sounds easy enough and right up my alley- glad you shared! I need cool (as in temp) recipes for summer! I thought that movie looks awful just from the previews so I think I'll skip it haha I'm just not a huge Joaquin fan...no??

  20. I LOVE Greek salads! Despite my best efforts and as delicious as they are I've yet to recreate one as good as the salads we had in Greece. Just made a mental note about the Publix chickens, too. We're getting one later this year and I can't wait. I've heard amazing things about their subs, too.
