Dinner and a Movie

by Ally- Life as I know it, 9:03 AM
I haven't done one of these posts in awhile! I'm making up for it with a really good recipe today!

I love Chick-Fil-A. Let me rephrase that, I LOVE Chick-Fil-A. So I was really sad when I read how unhealthy CFA really is. There's over 100 ingredients in their CFA sandwich including MSG, GMO Corn, and chemical preservatives. All things that can contribute to asthma, allergies, weight gain, depression and headaches. Well, my girl Foodbabe came to the rescue and convinced Chick-Fil-A to start serving only hormone free and antibiotic free chicken and to remove food dyes, corn syrup and TBHQ for from their food in the next 5 years. But until then you can have "healthier" CFA in the comfort of your own home! I say healthier in quotations because I used white flour and non organic pickle juice but at least I know what was going into my sandwich, and it wasn't 100 ingredients! I was amazed with how legit this sandwich tasted. I don't know if it was the chicken marinating in the pickle juice for 12 hours or the breading, but this Homemade Chick Fil A Sandwich tasted almost like the real thing.

Homemade Chick-Fil-A Sandwich
adapted from Foodbabe

2 large chicken breasts
1 large egg
1/2 cup unsweetened almond milk
1 cup pickle juice
12 pickle slices
3 tablespoons white or apple cider vinegar
1 1/2 teaspoon paprika
1 cup flour of your choice
1 tablespoon powdered sugar
1/4 teaspoon dry mustard I didn't have any so I used 1 tbsp of Hellman's yellow mustard
1 tablespoon powdered sugar
1/4 teaspoon baking soda
4 whole wheat hamburger buns or buns of your choice
1 tablespoon of butter

Cut chicken breasts in half making 4 similar size pieces. With a meat tenderizer or small hammer pound the chicken to ½ inch thick. Sprinkle salt, pepper and ½ tsp paprika to both sides of chicken. Place chicken in a bag with 1 cup pickle juice and let marinate for at least 4 hours to one day prior to baking.

Preheat oven to 450 degrees. Place pickle slices in vinegar and let marinate while you prep the chicken. In a bowl, combine and stir flour, sugar, baking soda, 1 tsp paprika, dry mustard and set aside. In another bowl, whisk egg and almond milk together. Remove chicken from marinade and dredge one piece of chicken at a time in egg bath, ensuring each side is wet and dredge in flour mixture coating each side. Place each flour coated chicken piece on a wire rack with pan on bottom. Spray each piece liberally with olive oil covering both sides. Place tray of chicken in oven. After 12 mins, turn each piece of chicken over mid way through baking. After about 25-30 mins, chicken should be completely cooked and crispy. Take out of the oven and let rest at least 5 mins. While chicken is resting, butter buns and place in oven for 3-5 mins. Take buns out of oven, spread some mayo on the top bun, place 3 pickles on the bottom bun and chicken on top.

I was dying to see this movie. I told Theo we were paying any price to watch it On Demand the day it came out. I'm a woman who gets her way (sometimes), and watched it when it came out on Tuesday. I thought it was really entertaining and funny at times. I was hoping for it to be funnier and so was Theo but I did enjoy it. Yes, the tricks they play on The Cheater have been done before but it was still awesome seeing him suffer. If you don't know the plot, Cameron Diaz is dating a guy and it seems to be going well. Till she shows up at his house to surprise him only to meet his wife at the door. The girls realize their man is playing them both so they decide to get even. It's a cute girl movie which is why they added Kate Upton to the mix so the guys have something to keep them entertained too. You know if your guy is into that type of girl, which according to Theo he isn't. (I'm not stupid.) Anyways, I do recommend it but don't pay too much to rent it, 99 cents at Redbox will do!

  1. Ohh I should try these sandwiches. I could convince Kevin to eat them since he loves Chick Fil A but hates chicken at home usually.

  2. OMG you just made me so sad about Chick Fil A! I had no idea it had over 100 ingredients. I'm definitely going to have to try your homemade version then. And I totally want to see The Other Woman too. I had a feeling it was probably one of those "been there seen that" movies but it still looks cute!
