I love quiche but don't make it enough. When I asked my friend Heather to come over on Sunday for brunch I knew I wanted to try a new recipe. This quiche originally called for Smoked Gouda cheese but I couldn't find any at the grocery store so I decided to try another Danish cheese, Fontina cheese, and it tasted great. If I make this again I want to add some bacon and mushrooms. This was very easy to make and very tasty!
Spinach, Green Onion, and Fontina Quiche

Ingredients
1 store bought frozen pie crust, thawed
1 tablespoon EVOO
1/2 cup thinly sliced green onions
3 cups fresh spinach
1 cup almond milk
3/4 cup grated Fontina cheese
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
3 large eggs
Recipe
Preheat oven to 350 degrees.
While crust is thawing out, heat EVOO in a large skillet over medium-high heat. Add onions, saute for 5 minutes. Add spinach, saute for 2 minutes.
Combine milk, cheese, eggs, salt, pepper, and garlic in a bowl and stir well with a whisk. Stir in spinach/onion mixture. Pour filling into crust. Bake at 350 degrees for 35 minutes. Cook for an additional 5-10 minutes for a firmer texture.
Of course you have to chase it down with Mimosas!
