Dinner and a Movie

I said it before but I'm a kale kick right now. I've been eating it every single day and have been looking for new ways to eat it besides in salads. I found this recipe for Gnocchi with Sausage and Kale and decided to change it up and use the Aidells Chicken Meatballs which are insanely good, instead. You can buy the meatballs at Publix/Harris Teeter but they also have them in bulk at Costco. We'll heat them up and eat them by themselves sometimes. They're so flavorful and since they're all natural they're a healthy protein as well. My favorite is the Caramelized Onion Flavor so that's we added to this pasta dish. And of course gnocchi is always a good idea.

Gnocchi with Chicken Meatballs and Kale


1 package of gnocchi
1 tsp EVOO
1/2 red onion, diced
4 cloves of garlic, minced
3-4 Aidells Chicken Meatballs per person, chopped into quarters
1 pinch crushed red pepper
1/4 cup white wine, or chicken stock
10 cups roughly chopped kale
1/4 cup freshly grated Parmesan cheese


Heat the oil in a large skillet over medium heat. Add the onions and saute until they start to soften, about 4 minutes. Add the meatballs and garlic and saute 3 more minutes.

Add the kale and the wine. Season with s&p. Toss until the kale has wilted and is bright and green. You may need to use a lid to get the kale to wilt quickly.

In the meantime, cook the gnocchi in boiling water till they start to float to the top, about 2-3 minutes. Drain and reserve 1/3 cup of pasta water. Add the gnocchi to the sausage and kale mixture, toss to combine. Add enough pasta water to create a thin sauce.

Off the heat, add the cheese, and another drizzle of olive oil.



I can't believe I haven't posted about this movie before. Theo is obsessed with Pitch Perfect, yup that's right. Actually he and his brother's wife are equally obsessed and will watch it on repeat when they're together. I'm sure everyone has already seen Pitch Perfect but if you haven't it's about a college acapella group, the Barden Bellas, trying to win their National Championship. It's really quirky and funny and just entertaining. I mean if my husband, a guys guy to the max, likes it, you know you'll like it. Elizabeth Banks is the commentator in the movie and she's hilarious. They just wrapped the second movie so that's supposed to come out next year. Pitch Perfect has been on HBO a lot lately but you can also rent it from Redbox. This was one of those movies I kept begging Theo to watch with me and when we finally did, he ended up enjoying it more than me!

  1. I love chicken or turkey meatballs so good- trader joes has some good ones too. I've only seen pitch perfect once before - but it was really cute!

  4. I love that Theo loved Pitch Perfect! Nick abandoned me half way through the movie.. although to his credit, we watched it when it was brand new and both thought it was going to be about baseball, ha!

  5. gnocci is ahhhhmazing. i should try out those meatballs! pitch perfect is hilarious! except for the girl who only spoke super soft. that was weird.

  8. I've never seen PP - need to change that! Loving the idea of adding more than just a (fat ass) alfredo sauce to gnocchi.
