I Heart Kale

I've recently started eating kale pretty much every day. So much my husband told me the other day "No more kale!!" Too bad for him because I just bought a new bag. :) There's a few recipes I like to rotate. Kale is great because it holds well in the refrigerator. I like to make a salad on Sunday and eat off of it for the next few days, that's if it lasts. I can easily eat a whole salad in a day. Kale is part of the "Dirty Dozen" meaning it's one of the top pesticide contaminated fruits/vegetables so it's best to always buy it Organic.


This was one of the first kale salads I tried and now I've gotten my mom and my step dad hooked on it too. I don't make it exactly as the recipes calls for, I use panko bread crumbs instead of making my own, and I use already grated Parmesan cheese. This salad is a good example of one that tastes better the longer it sits in the refrigerator. 



Melt In Your Mouth Kale Salad
This is more of a sweeter salad but the name doesn't lie, it truly does melt in your mouth. It calls for pine nuts but I usually just use almonds instead. This salad has become my favorite kale salad to eat and it's so easy too. As long as you keep the ingredients on hand which most people have anyways, you can whip this up anytime. 




Kale Caesar Salad
My mom made a variation of this and I think I prefer kale instead of romaine now for Caesar salads!

  4. I've only had kale in the Zuppa Toscana at Olive Garden but a kale salad actually sounds really good! That tuscan one sounds delish!

  5. Kale Caesar is one of my favorites and I actually had it on Sunday!! It's just packed with so much good stuff!! I love Kale chips too...need to try that tuscan kale - it sounds amazing!

  7. I love using Kale because like you said, it really holds up in the fridge. It's the only salad I can make on a Sunday that will still be good for lunches on Thursday or Friday.

    Sometimes though, if I'm eatting too much I can find it's hard to digest, but overall I'm pretty obsessed and start to crave it too.

  11. Yum that last salad with avocado and strawberries looks delish! I may have to try this kale thing. Have you had kale chips? I remember joking that we were going to serve those to you and Theo when you came over.. haha!

  14. I totally crave kale Caesar salads. You need to pick up the "Baby Kale" with the organic lettuce. It's in a box at Publix and it is FANTASTIC for salads - not as tough/thick as the bunched kale and it is also super good in smoothies.

  16. Ive used this some before, but since mu husband doesnt eat it, it always goes bad before I can use it all up! I love spinach too though - I need to find more recipes for this!

  17. I've also never had kale! I got an e-coli infection from possibly eating lettuce in Mexico in high school and I've been terrified of any leafy greens ever since. Haha it's so sad because I LOVED salads!
