Dinner and a Movie

DINNER
Last Sunday night, Theo said he wanted a light meal after all the crap he had eaten over the weekend. I had a ton of kale so I looked up an easy soup recipe that included kale. Enter the White Bean and Kale Soup, or "Stoup" as me and Rachael Ray like to call them. For not having a ton of ingredients in it, this soup was surprisingly very flavorful and delicious. We both had two bowls and considered eating a third. This will definitely be on repeat, especially once Fall comes. So this soup is meat free but being a typical man, Theo asked if we could add some sausage to it. We added in 2 chopped Aidells Habanero and Green Chili Chicken Sausages. It gave the soup a good kick and was kind of a nice addition to all the vegetables. 


White Bean and Kale Soup

Ingredients

1 tablespoon olive oil
8 large garlic cloves, crushed and minced
1 medium yellow onion, chopped
4 cups chopped raw kale
4 cups low sodium chicken broth
2 cans (15 oz) white beans, such as cannellini or navy, undrained
4 plum tomatoes, chopped
2 teaspoons dried Italian seasoning
salt and pepper to taste
1 cup chopped parsley for garnish
grated Parmesan cheese for garnish


Recipe

In a large pot, heat olive oil. Add garlic and onion, saute until soft.
Add kale and saute, stirring until wilted.
Add 3 cups of broth, 2 cups of beans, and all of the tomatoes, herbs, salt and pepper. 
Simmer for 5 minutes.
In a blender or food processor, mix the remaining beans and broth until smooth.
Stir into soup to thicken.
Simmer for 15 minutes.
Ladle into bowls, sprinkle with chopped parsley and Parmesan cheese.



Add some crusty bread or homemade cornbread to soak up the soup.
Enjoy!



MOVIE

When I say run and go rent this movie ASAP, I'm not even kidding. Theo and I have never laughed so hard. Adam Sandler's movies haven't been too funny in the past few years,  I mean did you see Jack and Jill?!, but he made up for it with Blended. We're total losers and watched it 2 nights in a row, that's how much we liked it! If you don't know the plot, Drew and Adam are single parents who go on a blind date together. The date goes horribly wrong and they plan to never see each other again. That doesn't happen, and they both end on the same African vacation together with their families. Adam and Drew, you like that first name basis I got going on, have such good chemistry together and are so good at comedy. Watch this movie!!
