Dinner and a Movie

I found this recipe for healthier mac and cheese and I knew I had to try it. Mac and cheese is one of my favorite vegetables, yes in the South we consider mac and cheese a vegetable, but man is it fattening. My mom makes it in the crock pot and it is so freakin good. So back to this recipe, first of all you use Spelt Pasta. Spelt is a whole ancient grain that hasn't been overly processed like white or wheat pasta and it has a softer texture than wheat pasta. It actually tastes like you're eating white pasta. Spelt also has more protein than wheat so it's a great alternative. You sneak in cauliflower to this mac and cheese and I promise you don't taste it at all. So Momma's this is a great way to get your kids to eat their veggies. The only cheese you need is shredded cheddar cheese. I know it doesn't sound like a lot, but this mac and cheese was delicious. It was even good the next day heated up for lunch. I loved knowing that I was eating a healthier mac and cheese, you don't feel as guilty going for round 3 you know? We decided to amp it up even more and add in some cooked chicken breast. I'm pretty sure this will be the only way we make mac and cheese now on. It was just so good!


Healthier Homemade Mac and Cheese with Chicken

Ingredients
Serves 8

2 tablespoon butter
12 ounces shredded mild cheddar cheese
1 head cauliflower
16 ounce package of Spelt pasta 
3 skinless, boneless chicken breasts
salt and pepper
dash of nutmeg
1 tablespoon olive oil
Italian seasoning



Recipe

Heat olive oil in a medium frying pan. 
Season each chicken breast with salt, pepper, and Italian Seasoning.
Cook each chicken breast till white throughout. 
Once cooked, shred chicken with fork and knife and set aside.
Boil 8 cups of water in a large pot.
Add pasta and cook until al dente, or according to package directions.
While pasta is cooking, cut cauliflower into large pieces and steam in a large pot with 1-2 cups of water. 
Cover the pot with lid and let cauliflower soften.
Once finished, mash cauliflower with a potato masher or pulse in a food processor.
Mix grated cheese, cauliflower, butter, chicken, salt, pepper, and nutmeg to drained pasta.
Stir well and enjoy!


I served ours with my favorite Tuscan Kale Salad. I like to make a batch of this early on in the week and eat it daily, that's if it lasts. I can easily eat it all in a day.

This is a great psychological thriller. Russell Crowe's wife, played by Elizabeth Banks, gets arrested for murdering her boss. They lived this perfect life and one day cops come to their house and take her away in handcuffs. As years pass she ends up getting an extended prison sentence and Russell Crowe realizes he must do everything he can to get his wife out. The Next Three Days is intense from the moment it begins and keeps you on the edge of your seat.

  7. This looks so delicious! I don't like too much cheese in my mac & cheese, which sounds kind of weird, haha, but I bet I would love this version! We really liked that movie-- I think we may have watched it twice!
