With my job I never know what time I'll be home. Pretty much every night I'm leaving work I call Theo and ask him what he wants to do for dinner. This could be at 8 pm which means by the time I get home and we decide what to make, we're looking at 9-9:30 for dinner. The nights I'm off work I always try to have a nice meal planned when Theo gets home but there's 3 other nights of the week that are up in the air. So we decided we're going to start meal planning and have all the ingredients we need by Sunday. My biggest issue is to not find recipes that are such a big to do. I tend to want to try something new and end up finding these extravagant recipes and it's just too much for a simple Tuesday night dinner. I'd love to hear how you manage weekly dinners and any easy healthy recipes you recommend. Here's what I've come up with for this week's dinners:
Monday: Kale and Feta Quiche with homemade Wheat Crust
Tuesday: Chicken Taco Salad
Wednesday: Dinner out
Thursday: Balsamic Beef with Sauteed Green Beans
Friday: Dinner Out

Crock pot recipes are really big on nights when we're both going to be home late from work - saves so much time for us!! I also love making stir fry's and salads - just east to throw everything together!! The quiche is a great one too!

ReplyDeleteI have to meal plan, or we end up eating frozen pizza every night. I always dread doing my big grocery trip on Sundays, but it's well worth it! Saves us a lot of money and calories every week.
ReplyDeleteMeal planning is huge in our house! We spend 3 nights a week at the gym after work, so we have to make sure we have light & healthy meals ready to go, otherwise we'd probably not eat lol. Tuesdays are my free nights and I love preparing a nice meal on those nights :)
ReplyDeleteI always decide on really complicated recipes when I'm meal planning too. Or I spend so much on groceries for one week. On the rare occasion that I meal plan these days, I always look at what is BOGO or on sale and base my meals off of that and what I would have as leftovers to save some money!
ReplyDeleteGood call on getting more organized. Freezing chili or having turkey burgers in the freezer on hand are great too since you can call Theo when you leave work and let him crank up the oven/grill ;)

ReplyDeleteI just started meal planning this week. It's hard! I needed to find things I could prepare kinda beforehand and have the husband start when he got home so it would be ready when I got home - everything is so 'fancy' on pinterest and the like, it's like I just want a normal dinner please!
ReplyDeleteoooh quiche i love quiche, i should make it soon. would pumpkin quiche be too much?? meal planning is definitely helpful i start freaking out if it is 4pm and I have no idea what is for dinner then that means I go to the store and spend too much because I didn't plan appropriately

ReplyDeleteWhenever I take the time to actually meal plan, my week is so much easier. It's so nice to come home from work and already know what I'm making versus standing in front of the fridge for 5 minutes. That quiche looks amazing, I love making them as breakfast for the week!

ReplyDeleteI wish I could do better at meal planning...occasionally I get my shit together on Sunday's and make a plan; but those often seem to change anyways, so I seem to just go day by day. I love some of your recipes this week!! That beef looks right up my husbands alley.
