Dinner and a Movie: Girls Night In

So the other night Theo had a guys night so it was just Pixie and me. I decided to make something I wanted to eat and watch something I wanted to watch without having to make sure it was OK with Theo, he can be pretty opinionated. I ate junk earlier that day and the night before so I knew I wanted something on the healthier scale. I know what you're thinking, girls night in requires pizza and wine and trust me I was craving some pizza but my body was begging for leafy greens. And I put so much cheese on this salad I really don't think I did myself any good. Oh and I did have wine, can't forget that.

This salad is seriously good. The salty blue cheese with the tanginess from the apple cider vinegar plus the sweet Honey Crisp apple is amazing. I made myself a salad, put everything up, ate it, then pulled everything back out so I could eat another one. You could also make a big batch of this and serve it for Thanksgiving. Mmm.. I'm drooling just thinking about it.

{Kale and Apple Salad}
serves 4-5


2 tablespoons olive oil
2 teaspoons apple cider vinegar
1 teaspoon fresh squeezed lemon juice
⅛ teaspoon salt
6 cups torn kale leaves, big ribs removed and discarded I used mixed greens of kale, chard, and spinach.
1/2 Honey Crisp or Gala apple, cut into thin, 1- inch pieces 
1/3 cup walnuts, chopped and lightly toasted
3 to 4 tablespoons crumbled blue cheese Or more...


In a small jar, combine olive oil, vinegar, lemon juice and salt. Secure lid and shake vigorously to combine.
Place kale leaves into a large salad bowl and using your hands massage the dressing into the leaves.
Throw the apples, walnuts, and blue cheese on top of the kale and lightly toss to combine.
There's A LOT more cheese on there it just all fell to the bottom.


I ended up watching a Hallmark Christmas movie that night, I'm a sucker for those, but I decided to list my favorite chick flicks. You know the ones that you always change the channel to if they're on TV and you never tire of?
 I mean who doesn't like this movie?! I always thought Kate and Matthew had such good chemistry and would be so cute in real life together.

I can never decide which movie I like better, Part 1 or 2, but either way I love these movies

If you have any interest in fashion you'll love this movie. I started to read the sequel book but it kind of blew, did anyone read it and enjoy it?

I don't know what it is about this movie but it's one of my favorite movies ever. I love the family dynamic and it's just a cute feel good movie.

I can't get enough of this movie and around Christmas it's all I want to watch. Ryan Reynolds is hysterical. If you haven't seen Just Friends yet then get on it.

This another one of those movies I just really like. I like it so much I watched it back to back one day and was considering watching it for the third time. Not normal. Oh and this was made before Amanda Bynes went loco.

This is a great Christmas movie but I'm sure I don't have to tell you that. I haven't met a person who hasn't loved Love Actually.

As much as I love Clueless, I think my husband may love it a bit more. He can pretty much quote every line from it.

My favorite part in My Best Friend's Wedding is when they all sing "I'll Say a Little Prayer" at the table. Such a great movie!

  4. I absolutely agree with all your chick flick selections!! I'm pretty sure My Best Friend's Wedding is one of the best movies ever - the scene at the restaurant when they are all singing...I totally sing along! Meryl Streep in It's Complicated is my favorite!! :)

  6. I've been having a similar salad at work this week, I cheated though and used the Panera Fiji Apple Salad Dressing.

    Those are great movies! Father of the Bride always makes me ugly cry. My favorite can't change the channel movie is Somethings Gotta Give, it gets me every time.

  7. Tis the season (almost) for Love Actually but I could watch that year round. Did you ever see One Fine Day? Older and SO good. Love the salad combo!

  12. That salad looks delicious- I'm not a big salad person (I wish I was more), but I love salads that incorporate fruit! It's always good to get in the cheesy holiday movies while the husband is away :) My Best Friend's Wedding is one of my all-time favorites too!
