Weekend + The Best Baked Sweet Potato Ever

We had a great freezing cold weekend. Friday when I got home from work I was in for a real treat and received my Loren Hope earrings in the mail. I won them in a giveaway through Social Dress Shop. They're so gorgeous and I was so thrilled to have won them! I feel like I never win anything!




Friday night Theo made a fire in our firepit and we sat around the fire with a few cocktails listening to Van Morrison on Pandora, great station by the way.

Theo cooked his Famous Steaks and I baked us two sweet potatoes.

I just had to share the recipe for the sweet potatoes. I was never a big sweet potato fan unless they're loaded up with honey butter, brown sugar and cinnamon, you know totally unhealthy. These sweet potatoes are baked in the oven at 400 degrees for 45 minutes. Make sure to prick in a few holes in the potato before baking. Once it's finished, cut down the middle and spread apart then add 1 tablespoon or so of coconut oil to each potato. If you think this is too much or too little ;) of coconut oil add as much as you like. Then add a few sprinkles of cinnamon and enjoy. I swear you'll  be a sweet potato lover too. You don't taste coconut at all, I was worried about that, instead the oil and the cinnamon give the potato such a sweet taste you'd think honey butter and sugar was on it. Plus coconut oil is extremely healthy and so is cinnamon. We've actually been eating potatoes like this a lot lately and Theo loves them. 
Can you believe I ate that whole steak and sweet potato?!


Saturday I did some shopping with my mom and got a few Christmas decorations. I've already started to put some out which I know is ridiculous. I can't help it I get so excited about Christmas. 



That night we went to dinner with Cait, Shelby, Jillian and our husbands at EVO pizza. It was yummy as usual and a lot of fun getting our husbands together.





Sunday was spent cleaning and relaxing.  Now it's back to the grind.

  2. Ahhhhhh I'm so jealous of your amazing blogger date with all those ladies!!!! I am cracking up over your dinner because thats exactly what it looks like when Mark cooks.....meat and starch.....I'm always like wheres my veggie and yeah that doesn't happen. Good to know about the coconut oil I'll definitely have to try that!
