Weekend

How was your weekend? Has the time changed messed you up yet? It will be nice to go to work with the sun actually out but getting dark at 5 pm blows. We definitely got a taste of winter here this weekend. It was freezing on Saturday and Sunday! The weather in Charleston is so fickle, it's going to be in the 70's all week! I'm not complaining, even though it was ice cold I loved being able to wear jackets and boots. I just wish it would make up it's mind!

Friday was Halloween and we sat outside on the porch and passed out candy to trick or treaters. I  was a bad mommy and didn't get Pixie a new costume this year so she ended up going as a bumble bee again. Surprisingly she doesn't mind wearing costumes. I know most dogs can't stand it.

Saturday was rainy and freezing so I wore my J Crew Swing sweater and boots. We just ran errands all day and ate lunch at Home Team BBQ. I wish I hadn't waited to order my sweater because now they're practically sold out and I want more in other colors. I have a couple of the v neck ones from last year but I love the crew neck style this year.

I also painted my nails for the first time in months. I wash my hands so much at work polish never lasts for longer than a week, if I'm lucky. I used Essie Merino Cool which I thought was kind of funny since the sweater I was wearing was made out of Merino Wool.

Saturday night we went on a dinner cruise for my aunt's 60th birthday. It was my first time going on a dinner cruise and sadly it wasn't the best experience. The weather was windy and cold and the water was choppy so we never left the dock. We may as well have been at a restaurant. The boat is supposed to take you through the harbor and underneath the Ravenel Bridge which I was dying to see at night but instead we didn't move an inch. My aunt had a great time which is all that matters!

We ended the weekend at my parent's house Sunday night for some chili and homemade jalapeno cheddar cornbread. I like to add my cornbread to the chili. Try it sometime instead of saltines, it's yummy.

I used the recipe on the back of the cornmeal bag and added about 2 cups of shredded cheddar cheese and 1/4 cup or so of chopped jalapenos from the jar. We usually eat Jiffy but I wanted to try to make cornbread from scratch. Plus Jiffy has so many ingredients. The cornbread turned out pretty good, next time I'll add sugar which was optional. It had a gritty taste and was drier than Jiffy but I liked it for a change. This was the bag of cornmeal I had with the cornbread recipe on the back.

Have a great Monday!

  8. Sorry you weren't able to get the full boat experience but hopefully you can do it again on a prettier day! I used to make Jiffy also but the ingredients scare me. The Trader Joe's version is really good and a bit sweeter, plus it has far fewer ingredients! Oh and with the time change, I think I'm having a harder time adjusting than my kids - I woke up at 5:30 this morning!

  11. We had cornbread on Halloween with chili...how have I never thought to add the cornbread to the chili though? Such a yummy idea! I always make my cornbread homemade with buttermilk and it's pretty moist compared to other cornbreads I've tried. I personally think it's the best! Here is the recipe if you ever want to try it: http://www.loveandbellinis.com/2014/01/buttermilk-cornbread-with-honey-butter.html
