I wanted to start sharing what we ate for dinner during the week on Friday's post. I love seeing what people make for dinner, especially when it's not complicated so I thought you might too. Theo and I have made it a mission to eat less dairy and gluten and especially in our dinners. I was pretty proud of this weeks meals and they were all fairly easy to make too. As much I love to spend the time making a nice recipe out of a fancy schmancy cookbook, it just isn't practical when you're rushing home after a long day at work. Theo is pretty good at throwing meals together so that helps a lot too.
Monday
This was the first meal we made with my new Paderno Spiralizer so I didn't really know how it was going to turn out. It was a great first recipe to make because it was pretty simple and delicious. I love shrimp scampi and this recipe is great because you still get the buttery shrimp plus the noodle taste even though you use zucchini and squash.
Tuesday
Avocado Chicken and Baked Sweet Potato
This came together at the last minute and I'm glad it did because it was delicious. Avocado on chicken is actually really tasty, but when is avocado not tasty, and I have a serious love affair with baked sweet potatoes. It's always good to have avocados on hand and I like to keep a couple of chicken breasts in the freezer at all times.
Wednesday
This was our second spiralizer meal to make and it wasn't nearly as good as the Shrimp Scampi. We added shrimp to it to up the protein and it kind of left it with too much of a shrimp taste. Although Theo liked this a lot, I probably won't make it again.
Thursday
Lettuce Wrap Tacos + Madras Lentils
One of Theo's favorite things to make is tacos so he came up with the idea of using romaine lettuce instead of shells. He just sauteed the chicken with some leftover mushrooms from the recipe the night before and added a little bit of salsa and shredded cheese to the lettuce. Although I'm trying not to eat dairy I just couldn't imagine a taco without cheese so I added some to mine but honestly I could have done without it. It didn't add enough flavor. You wouldn't think chicken wrapped in lettuce would be filling but you eat two of these and trust me you're full. We served some Madras Lentils from Costco with it as well. I love them because they're very few ingredients and delicious. They taste just like refried beans.
Having a healthy meal won't be easy every night but having bags of frozen shrimp and extra chicken breasts in the fridge/freezer definitely helps. I also like to stock up on grass fed beef when Earth Fare has it on sale. You can get it for about $4 a pound which is an insane deal. And of course there's always Chick-Fil-A up the road when you're really out of ideas!

Loving the idea of shrimp scampi but using the spiralizer. Y'all are doing really well with the no dairy/gluten! I used a little 6-month dry aged sharp cheddar on our Mexican pizzas this week and since it's so low in lactose it wasn't a dairy culprit! Wonder if aged cheeses would be better for you, too, when you do want to indulge? Love the recipes! Happy weekend :)
