Friday Round Up + A Week of Meals

~Our new bedroom furniture came in this week (YAY!) but our mattress isn't coming in till next Tuesday (NOO!) so the furniture will just continue to hang out till we get the mattress. We got our bedroom set from Rooms To Go, it's the Summer Grove Gray Set. We bought our living room set from there over 2.5 years ago and the quality was actually really nice. It's so easy to walk in the store, pick out a set, and have it delivered. No other thought process involved, well except how you're going to pay for it all. 
There's a small chip in the foot board so that'll be replaced next week as well!



~I've been kind of disappointed with Madewell's clothes lately. I really think they do Spring and Summer better than Fall/Winter. I was browsing their site the other day because I miss Madewell and was hoping they stepped up their game. Definitely fell in love with a lot a few things.




~MindBodyGreen is my favorite website hands down. I check it daily and just love all of their interesting articles on ways to live your life better. There's also articles on holistic ways to treat ailments. I came across this article and thought I would share it. 11 Lessons To Become A Healthier, Happier, More Peaceful You. I always have an inner monologue going in my head. Worrying about something that I have zero control over. The article was just what I needed this week. I especially loved the part about valuing your struggles and how they shape who we are.



~Our Paleo dinners were really delicious this week. I've been excited about sharing them because they were all so good! I hope me sharing our meals has given you some ideas for your weeknight dinners. When we first decided to go Paleo I just knew it was going to be hard to find easy, delicious meals since they wouldn't have dairy or gluten in them. I definitely miss cheese at times, Ok I miss it a lot, but I've found if you make recipes that have a ton of flavor you kind of forget cheese and bread isn't involved, kind of.

Monday
Apple Juice Chicken with Steamed Green Beans
You guys, this was so good I wanted to lick my plate clean. The chicken recipe calls for 3 things, chicken thighs, apple juice, and salt & pepper. So not only was it easy peasy, it was delicious. This will definitely be on repeat weekly at our house, maybe even nightly.


Tuesday
Vietnamese Lettuce Wraps
The Nom Nom Paleo Cookbook was a gift for Christmas and at first it intimidated me but after really looking at, there's a lot of good recipes I would never think to make. Like these wraps that have pork, apples, and carrots in them. They were super tasty and very filling.


Wednesday
Roasted Cauliflower and Chickpeas with Mustard and Kale Caesar Salad (dressing found here)
The cauliflower and chickpeas are from Gwyneth Paltrow's Cookbook It's All Good and are one of my favorite sides to make. Although I eat it as a meal rather than a side. The Kale Caesar salad went really well with it too.

Thursday
This is supposed to be served back in the spaghetti squash shells but anyone who has cooked spaghetti squash knows after you get all the insides out, the shell is pretty much destroyed. So we ate it in bowls and I'm sure it tasted the same. We buy the Bilinski's brand of chicken sausage from Earth Fare or Harris Teeter and it's really good.

  4. That Nom Nom Paleo cookbook has been floating in and out of my Amazon cart. I need to just commit and get it, I've made a few recipes from her website and have been a fan of all of them.

    I'm putting that apple chicken meal on my list this week!

  9. I'd pinned that same apple juice chicken recipe and wasn't sure it could be that good with only three ingredients but I'm really happy to hear it is! Also need to try the cauliflower and chick peas because YUM!
