DINNER
I found this recipe on the Instagram account Prettyinpaleo. Not really sure how I found this random girl's IG but I'm glad I did because she posts delicious Paleo meals with the recipe listed under each picture. This was the first recipe I tried and it definitely won't be the last. Even without cheese and carbs it was delicious. We had my mother in law over that night and she kept raving about it and said "It's the best thing I've ever eaten!" She's known for exaggerating at times so I wouldn't go that far but it was really good. It was like a comforting casserole without all the fake junk.
Italian Spaghetti Squash Bake
Ingredients
1 spaghetti squash
1 lb ground beef - I used 1 lb ground turkey
4 eggs, whisked
1 onion, chopped
1 red bell pepper, chopped
1 14oz can Fire Roasted Diced Tomatoes
2 garlic cloves, minced
1 tablespoon Italian Seasonings
1 tablespoon fresh basil, chopped
1 teaspoon salt
1/2 teaspoon pepper
Recipe
Preheat oven to 400 degrees.
Cut squash in half lenghwise and scoop out seeds. Roast cut side up for 30 minutes or until fork tender.
Cook beef, onion, red bell pepper, and garlic until meat is brown and veggies are tender. Strain any fat and add tomatoes and spices. Cook until heated through.
Scoop out squash, separating the strands with a fork, into a large bowl. Add meat mixture and eggs. Mix everything together until well blended.
Place mixture into greased 8x8 dish and bake for an hour or until the top is crispy. Sprinkle with fresh basil and serve.

MOVIE
Theo and I saw Kingsman at a matinee on Sunday afternoon, which is the best time to see a movie you're kind of iffy on. It was definitely action packed and exciting and I really liked it. Theo thought it was just ok which is pretty funny because I'm usually the one who can't stand action. It had a lot of comedy in it too and the F word is used every other second. Which only bothered me when I saw two young boys in the movie with their dad. Why do people take their little kids to R rated movies?! Kids are only young for so long. Anyways, go see this movie, it was funny and full of action.
Yummm that bake looks amazing! And I'll have to rent Kingsman sometime, I was wondering if it was any good. I love Samuel L Jackson!
