Dinner and a Movie: Taco Salad with a Yogurty Salsa + Remember Me

DINNER
Now that I'm past the food aversions and nausea, I'm feeling like myself again and ready to start cooking some healthy dinners. You can never go wrong with Mexican night at the house and this recipe is a healthier spin on the traditional taco salad with the shell that is probably around 800 calories. Not that I'm counting calories, if anything I'm trying to eat more calories, but I do want to make sure I'm feeding my baby healthy nutritious foods. 


Taco Salad with Yogurty Salsa
recipe adapted from

Ingredients

1 lb ground turkey breast
1/2 tsp cayenne pepper
1/2 tsp cumin
1/2 cup plus 3 tbsp salsa, divided
1 15 oz can black beans, rinsed and drained
2 tbsp sour cream
8 cups chopped romaine lettuce
1 avocado, diced
1 medium tomato, chopped
1/2 cup shredded cheese of your choice, I used Spicy Colby Jack but Monterrey Jack would be good as well 

Recipe

Remove the turkey meat from the fridge ten minutes before cooking and allow to come to room temperature.

Add meat to a large pan and cook over medium heat, breaking up with a spatula. Add the cayenne and cumin and cook 6-7 minutes, or until the meat it white all throughout. Remove from heat, and drain off the juices.

Stir in 1/2 cup salsa and the beans into the meat and return to medium heat. Cook about 2 minutes, on until heated throughout. Season to taste with additional cayenne, salt, pepper, if desired.

Meanwhile in a small bowl whisk together the 3 tablespoons of salsa and sour cream. Set aside.

Divide the lettuce equally into serving bowls. Top with the meat mixture, tomato, avocado, and cheese. Drizzle with dressing and serve.

MOVIE

I was searching Netflix the other day and saw they had just added this movie. I remember seeing Remember Me when it came out back in 2010 and really, really liking it. It was kind of a slow paced love story but it kept you interested because the two main characters did not have easy lives. The ending was pretty crazy and so unexpected. This was right around when the first Twilight  movie came out so R. Patz was pretty big at the time. After seeing this movie it made me realize beyond playing a vampire, he's not only very hot but a pretty good actor. I'm also glad he finally dumped Kristen Stewart. Worst actress ever!

  10. I love making taco salads at home and usually just use salsa + extra lime juice as the dressing! You can also try subbing in nonfat greek yogurt for the sour cream to get the tang + creaminess without the fat and calories. So glad your food aversions are gone!!

  11. Yum that taco salad looks delicious! So glad you're past the food aversions- yay! I loved Remember Me and thought RPatz was pretty good in it too. I'm so glad he broke up with Kristin Stewart and would love to see him in more movies.
