Buddha Bowl

One of my big goals is to go plant-based. So many studies show it's so much healthier for your body and prevents disease and cancer. I wake up everyday with the plan to eat every meal plant-based. I always drink a green smoothie for breakfast but then real life steps in and before I know it, I'm in the Chick-fil-A drive thru. And that's ok, because I tried and did the best I could.
I'm really working towards a 80/20 diet- 80% plant/20% whatever. It's definitely more manageable and it allows you to eat a cookie or cheese or whatever it is you love. 

My whole point is, I made a Buddha Bowl the other night for dinner and just had to share- it was delicious! So a Buddha Bowl by definition (I had to look it up!) is a bowl full of grains like quinoa, rice, etc, some sort of protein like chickpeas, tofu, avocado etc., and lots of veggies, usually roasted or raw. You can top it with a sauce if you prefer.  It's a great way to get in lots of veggies and other healthy foods. Also perfect if you're having a fridge clean-out and need to eat food before it goes bad! 

Here's what was in the one I made:

Quinoa
Sweet Potatoes
Asparagus
Brussels Sprouts

Tahini Dressing
1/4 cup Tahini
1 tbsp maple syrup
Juice of half of a medium lemon
2 tbsp hot water (to thin)

I seasoned the veggies with salt, pepper, and olive oil then roasted them for 40 min at 400 degrees on the oven. 

Cooked the quinoa according to directions.

Then topped it with the Tahini Dressing



Even my meat-eating husband loved it!
